The 3 Best Sockeye Salmon Recipes for Summer

Recipe 1: Bourbon Cured Salmon*

You will need:

  • 1-pound fillet (with skin)
  • 1 cup brown sugar
  • ¾ cup kosher salt
  • 1 fennel bulb
  • ½ cup dill
  • Orange zest (qty.1)
  • 1 tbsp black peppercorn
  • ¼ cup bourbon

How to prepare:

  1. Place your salmon on a big piece of plastic wrap.
  2. In a large bowl, combine brown sugar, salt, fennel, dill, orange zest and black peppercorn.
  3. Pour bourbon over fish, patting it into the flesh.
  4. Pour your sugar and salt mixture over the bourbon.
  5. Tightly wrap the salmon in plastic wrap and place in a large bowl
  6. Allow fish to cure for 72 hours in fridge
  7. Unwrap, pat dry, and slice thinly.

Enjoy for up to 2 weeks (wrapped and refrigerated).

 

Recipe 2: Curry Rubbed Salmon*

You will need:

  • 1 tsp curry powder
  • 1 tsp brown sugar
  • ½ tsp lime zest
  • 4 (4-oz.) fillets
  • 1 tsp lime juice
  • crushed red pepper flakes (to taste)

How to prepare:

  1. Preheat oven to 450°F.
  2. Combine curry powder, brown sugar, lime zest and red pepper flakes in a bowl.
  3. Distribute evenly over the top of fillets and place in a shallow baking dish.
  4. Bake for 10 minutes or until the fish flakes easily.
  5. Drizzle with lime juice, serve.

 

Recipe 3: Smoked Salmon Dip*

You will need:

  • 8 oz. cream cheese (room temperature)
  • ½ cup sour cream
  • 1 tbsp lemon juice
  • 1 tbsp minced dill
  • 1 tsp horseradish (drained)
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • ¼ lb (4 oz.) minced smoked salmon

How to prepare:

  1. Cream the cheese in electric mixer until smooth.
  2. Mix-in sour cream, lemon juice, dill, horseradish, salt, and pepper.
  3. Combine salmon with ingredients, mix.
  4. Chill and serve.
